Why "Low Fat" Diets are Incorrect and Dangerous to Your Health!

Many individuals when first diagnosed with diabetes are directed by their physician onto a "low fat" diet and warned about the dangers of eating foods that contain fat or cholesterol.

The overwhelming evidence now shows that this is totally opposite of what they should be doing. Low fat diets result in the diabetic condition getting worse along with declining health levels. Below is what Dr. Diana Schwarzbein, M.D. states regarding cholesterol and fat in the diet:

"The medical profession and the media has so frightened the public about cholesterol and fat that people firmly believe they must be avoided at all costs. For many people today, eggs, butter and red meat represent the fear of cholesterol, and meats, nuts and oils represent the fear of fat. But this fear of cholesterol and fat is not grounded in scientific fact. On the contrary, cholesterol and fat are essential to life."

"Cholesterol and fat are used by the body as building materials for constant replenishment and are supposed to come from dietary sources. Eating cholesterol and fat do not cause heart disease and accelerated death. In fact, you must eat them to avoid heart disease."

"Cholesterol is a type of fat that has many functions in the body. Cholesterol is an important structure in cell membranes [cell membrane: the thin layer of tissue that forms the outer surface of the cell and regulates the passage of materials in and out of the cell], keeping the cell membrane permeable [permeable: allowing liquids to pass through] so that material can pass easily through the cell. The inside of the cell is also filled with various cholesterol-containing membranes that must be maintained so that the cell can function well."

"When your body is comprised of cells that are cholesterol depleted, and thereby less efficient, all the biochemical processes of your metabolism are affected, which means your metabolism cannot function as it should."

"When you deprive your body of cholesterol, an essential building material, membrane structure is altered. When membrane structure is altered, cell growth is disrupted. As a result, there is a potential increase in cancer because cancer arises from abnormal cell division."

"In addition, cholesterol is important to maintain normal functioning of various hormone systems and the immune system. Cholesterol is also the structural material from which many important hormones are made."

"Cholesterol is essential for brain function and the stabilization of neurotransmitters [neurotransmitters: a substance that transmits impulses between nerve cells]. Mood problems such as depression, agitation and irritability can occur when your body does not get sufficient cholesterol."

"Cholesterol also forms insulation around the nerves to keep electrical impulses moving. Without this insulation there is an increase in the potential for diseases of the nervous system, such as multiple sclerosis."

"Cholesterol can be obtained directly from cholesterol-laden foods, such as butter, meat, eggs and shellfish. You should eat these foods and other types of fats every day."

"Low-fat high-carbohydrate diets eaten by patients with diabetes [non-insulin dependant] have been shown to lead to higher day-long plasma glucose [higher blood sugar levels], insulin, triglycerides, and very low density lipoproteins [bad cholesterol], among other negative effects. In general, study has demonstrated that multiple risk factors for coronary heart disease are worsened for diabetics who consume the low-fat high-carbohydrate diet so often recommended to reduce these risks."

The Incredible-Edible Egg!

About 10 years ago a negative advertising campaign was run concerning eggs. There were ads on TV and on billboards, with images of four eggs being led into a jail cell, and another ad showing the four eggs behind bars.

This was part of a campaign to tell the public that eating eggs was dangerous and could contribute to heart disease (which was incorrect). As a result, many people stopped eating eggs or greatly reduced the number of eggs they ate.

Even today, many people still remain afraid of eating eggs or eating too many eggs, due to that false campaign.

Today, what do nutritional experts say regarding eggs in the diet?

"The egg is nearly the perfect food for health and weight loss. It is easily digestible as well as a complete food. Eggs give your liver the building blocks it needs to repair your body. Cholesterol levels are not increased by eating them and you can lose weight by including them in your diet."

"Eggs contain ingredients to develop a healthy body including nearly all of the essential nutrients such as B-l, B-6, folic acid and B-12. They contain such minerals as calcium, magnesium, potassium, zinc and iron. Choline and biotin, which are important for energy and stress reduction, are also found in eggs. Eggs are also complete in all amino acids (protein building blocks), which are found in the yolk."

"The fat in the egg yolk is in nearly perfect balance. These essential fats are very important in the regulation of cholesterol. This is because the antidote [Definition: something that counteracts.] to cholesterol is lecithin, which helps dissolve cholesterol and the yolk is loaded with lecithin. Make sure not to overcook the egg yolk, as this will destroy the lecithin. These yolk fats in your diet lower the risk for heart disease."

"Eggs have almost zero carbohydrates and have the highest rating for complete proteins (containing all the amino acids) of any food. Amino acids are necessary for repairing tissue as well as making hormones and brain chemicals."

"As a side note, many people are afraid of eating egg yolks because of cholesterol. The fact is that most of the cholesterol found in our blood is not there because of what we eat. It's our livers that make approximately 75% of the cholesterol that exists in our blood."

"The more cholesterol we eat, the less the body will make. The less cholesterol we eat, the more the body will make. If cholesterol were so bad for us, why would our bodies make so much?"

"The body is an incredible system that knows exactly what to do to create a natural balance. When we consume foods containing cholesterol, we only absorb 1 to 2 mg of cholesterol per pound of body weight per day. So even if we were to eat a dozen eggs each day, we would only absorb about 300 mg of cholesterol, which is, by the way, the recommended maximum daily amount."

Yes, eggs are a very safe and excellent source of nutrition for the whole family, and should be made a regular part of the diet. But not all eggs are the same, so let's look at how to choose your eggs from another expert on nutrition:

"You can kiss your fear of eggs good-bye. There have been a number of previous studies that have supported that eggs do not increase your risk of heart disease. So go ahead and have your eggs as they are one of the healthiest foods on the planet."

"While you are at it, please be sure and purchase healthy eggs as they are not that much more expensive than commercial factory raised chicken eggs. Please be sure to look for 'free range organic' on the box."

"Just as important as where you buy your eggs is how you prepare them for eating."

"If you want to fine tune eating your eggs, it is best not to cook them. This helps preserve many of the highly perishable nutrients, some of which are very effective at preventing the most common cause of blindness, called 'age related macular degeneration.' [Definition - Macular Degeneration: the gradual blurring of the center of your field of vision, which continues to get worse, eventually resulting in blindness]."

"Some may be concerned about the risk of salmonella [Definition: a type of bacteria which can cause food poisoning.] from raw eggs, but I analyzed the risk a few years ago and most people have a better chance of winning the lottery than contracting salmonella from eggs from healthy chickens. Personally I consume three raw eggs nearly every morning as part of my breakfast and believe it has enormously contributed to my health."

Something You've Never Been Told about Breakfast Cereals

In most households you will find both parents and children sitting down to breakfast and automatically filling their bowls with some breakfast cereal.

When you go to the supermarket today you will find at least one entire row filled with boxes of cereals, all different colors, shapes and flavors.

There are cereals for kids (ones they've seen on TV) and "healthier" cereals designed to attract adults, claiming to have nutritional value.

But what is the truth and how are cereals made? The following was presented at Consumer Health Canada:

"Cereal makers first create a thin mud like mixture composed of water and grains. This mixture is then put into a machine called an 'extruder'."

"The extruder forces the grain mixture out of little holes at high temperature and pressure. Depending on the shape of the holes, the grains come out as little 'o' shapes, flakes, animal shapes, or shreds (as in shredded wheat), or they are puffed (as in puffed rice). Each little flake or shape is then sprayed with a coating of oil and sugar to seal off the cereal and give it crunch."

"In his book Fighting the Food Giants, Paul Stitt tells us that the 'extrusion' process used for these cereals destroys most of the nutrients in the grains. It destroys the fatty acids; it even destroys the chemical vitamins that are added at the end. The amino acids [Definition: the molecules that form proteins] are chemically altered by this process, thus diminishing and destroying their original qualities and properties."

"This is how all the boxed cereals are made, even the ones sold in the health food stores. They are all made in the same way and mostly in the same factories. All dry cereals that come in boxes are extruded cereals [Editor's Note: except some basic cereals such as 'rolled' oats or 'steel cut' oats]."

The rat experiments that were never published:

"Let me tell you about two studies which were not published. The first was described by Paul Stitt who wrote about an experiment conducted by a cereal company in which four sets of rats were given special diets."

"One group received plain whole wheat, water and a synthetic vitamin and mineral solution. A second group received puffed wheat (an extruded cereal), water and the same vitamin solution. A third set was given only water. A fourth set was given nothing but water and synthetic vitamins."

"The rats that received the whole wheat lived over a year on this diet. The rats that got nothing but water and vitamins lived about two months."

"The animals on water alone lived about a month. But the company's own laboratory study showed that the rats given the vitamins, water and all the puffed wheat they wanted died within two weeks -- they died before the rats that got no food at all."

"It wasn't a matter of the rats dying of malnutrition. Autopsy revealed dysfunction of the pancreas, liver and kidneys and degeneration of the nerves of the spine."

"Results like these suggested that there was something actually very toxic in the puffed wheat itself! Proteins are very similar to certain toxins in molecular structure, and the pressure of the puffing process may produce chemical changes, which turn a nutritious grain into a poisonous substance."

"Another unpublished experiment was carried out in the 1960s. Researchers at Ann Arbor University were given 18 laboratory rats. They were divided into three groups: one group received corn flakes and water; a second group was given the cardboard box that the corn flakes came in and water; the control group received rat chow and water."

"The rats in the control group remained in good health throughout the experiment. The rats eating the box became lethargic and eventually died of malnutrition. But the rats receiving the corn flakes and water died before the rats that were eating the box! (The last corn flake rat died the day the first box rat died.)"

"But before death, the corn flake rats developed bizarre behavior, threw fits, bit each other and finally went into convulsions. The startling conclusion of this study is that there was more nourishment in the box than there was in the corn flakes."

"This experiment was actually designed as a joke, but the results were far from funny. The results were never published and similar studies have not been conducted."

"Extruded cereals sold in the health food stores are made by the same method. It may come as a shock to you, but these whole grain extruded cereals are probably more dangerous than those sold in the supermarket, because they are higher in protein and it is the proteins in these cereals that are so denatured [Definition: made unfit to eat] by this type of processing."

Instead of having cereal, make a really nutritious breakfast of eggs (fried, scrambled, or omelet with meat, cheese or vegetables) with bacon, sausage, hamburger patty or steak. If you feel you must have cereal to make it through the day, "rolled oats" or "steel cut oats" are still real food.

The idea that there are breakfast foods, lunch foods and dinner foods are something we learn when we are young at the dinner table and from our parents.

In fact, when you wake up in the morning your body usually tells you that it is hungry. Your body does not care whether you feed it a juicy steak and steamed broccoli or a plate of scrambled eggs. As long as it is real nourishing food, you will be on your way to improved health and vigor!
